		<description>I got into homebrewing in March, and I&#039;ve been pretty obsessive about it ever since.  One thing the article is a little iffy on is that the regionality of beer styles has less to do with the water &lt;i&gt;flavor&lt;/i&gt; and more to do with the water &lt;i&gt;chemistry&lt;/i&gt;.  Also, &quot;racking&quot; is typically accomplished by siphoning, not by pouring -- otherwise you oxidize your beer and that&#039;s bad for the flavor and the shelf life.

And @Georg, yes, beer without hop, though I suppose one could debate where the boundary of &quot;beer&quot; comes in.  Many different bittering agents have been used in the past, not just the ones the article mentions.  People still experiment with that today.  I might even try it sometime...

Cool that people are interested in this stuff, even if the article is a little iffy on a couple of details.  It&#039;s mostly a good summary.</description>
